vanilla sugar 1 sachet
walnuts (roasted) 25 pieces - 125g
soda 0.5 tsp
milk 187 ml
flour 450g
Cream: walnuts (toasted) 75 pieces-375g
sour cream 0,5 l
sugar (I took 50-70 g less) 1.5 cups
raw yolks 4 pieces
cocoa 2 tbsp. l.
butter 300g
Sliding mold 26 D

Cooking method

  • I got this recipe from a classmate at the institute about 20 years ago, he won me over with its unusualness. I confess, yeah, I didn't bake it, but here we were actively discussing the nut cake from "Puzata Hata", so I baked it.
  • I baked half the norm, cake diameter 22 cm
  • Dough:
  • Cake with glass layers or Cake 100 nuts
  • Stir in chopped nuts, sugar, cocoa, vanillin, soda
  • Cake with glass layers or Cake 100 nuts
  • Add milk - stir, then gradually add flour. The dough should fall apart a little

  • Divide into 5 circles. I drew circles on baking paper, on which I rolled the dough right away

  • The paper was not smeared with anything, you need to roll it out thinly

  • Preheat the oven to 180 degrees, put 2 cakes in the oven, they were immediately baked for 7-8 minutes. This is how they look after baking, to the left the cake is turned upside down, to the right is the front side. Remove the paper immediately. The middle is a little soft at once, after cooling - the cake is hard.

  • Then put in the cold. I put it in the freezer for about 15 minutes. At the institute, we sprinkled the sides with nut crumbs, and the top was poured with chocolate icing. Now I am more advanced))) made a ganache from 75 ml of cream and 150 g of chocolate, coated the cake - cooled it, and then with the remnants of mastic, sorry, somehow decorated it in the quilling style.

Reducing the amount of sugar is very advisable, the ganache added sweetness, the mastic added more. I would recommend a cake without mastic, just ganache Sour cream adds a little sourness (you shouldn't change it for cream), just a little bit of crust and a pleasant nutty taste! You can't eat a lot, but delicious!
