Ingredients

Wheat leaven 100 g
Wheat flour 500 g
Salt 10 g
Water 300 ml
Dry yeast 2 g

  • Knead the dough, put it in a bowl, lightly greased with olive oil, covered with a towel and set aside for 1 hour.
  • Thoroughly floured the work surface. Using a plastic scraper, she separated the dough from the sides of the bowl and laid it on the table in one piece, without stretching so as not to let the air out of it. Spread the dough over the work surface and dust it well with flour.
  • With a scraper I cut the dough into two rectangles, and then each into three more. All the pieces are well sprinkled with flour, while the dough should remain light, airy.
  • In each piece, I made a central cut in the center and several cuts fanning from the central one. Gently spread the incisions with my fingers to make through holes.
  • The workpiece was placed on a baking sheet. Baked in an oven preheated to 220 * for 15-20 minutes until golden brown.

Fugass is actually a traditional French bread from Provence. And Francisco Tahero is a Spaniard, which means his sourdough is Spanish. But, since at the forum we have no national borders, I decided to unite the "French" with the "Spaniards"
In ancient times, the landmine served as a kind of thermometer to determine the temperature in the furnace. Originally, the fugass was a flat flour cake akin to focacce - both of these names come from the Latin word "focus", which means "hearth", because bread, similar in shape to a pancake, was baked right in the oven, under a layer of heated coals.

Alternatively, you can do it with filling, which is added during kneading into the dough. These are olives, and tomatoes, and cheese, and anchovies, dried fruits, nuts, bacon ...
