Ingredients

salt 9gr.
the water is cold 50 ml.
fresh yeast 6gr.
wheat flour 500gr.
sugar 10gr.
corn starch 10gr.
Butter (soft) 30gr.
malt 10gr.
milk is cold 250 ml.

Cooking method

  • On one of the German sites, an interesting (more correctly, amazing) recipe caught my eye, Curiosity, as always, prevailed and now the bread is baked. Here is the recipe for this bread.
  • Thoroughly mix the salt with water and yeast for 30 minutes (I just stirred it periodically) Let it brew for 20 (!) Hours.
  • Then add the remaining ingredients. Oil last. I kneaded everything in a bread maker on dumplings mode.
  • Let the dough rise for 2-3 hours.
  • I had 30 degrees in the kitchen yesterday. And I was wondering how, from cold ingredients, the dough will increase in size. And it increased! And not 2-3 times, but 3-4, or even more!
  • After proving, knead slightly (the dough is very good at work) and fill the form (or several) with it by 1/3.
  • Leave in the mold for about 1 hour.
  • Bake in an oven preheated to 200 degrees, the first 15-20 minutes with steam. Then remove the steam, lower the temperature to 175C, and bake for about 35 minutes.
  • Golden toast

Natasha, the recipe is really unusual. I would like to clarify a couple of points. Let the yeast dissolved in water with salt (what is the water temperature?) Leave at room temperature or in the refrigerator? How does this mixture look after so much time? And what kind of malt is used?

Marish, did the recipe surprise you too? The recipe is exactly what it says - water and milk cold... After 20 hours, in a container where there was yeast with water (I just kept it on the kitchen table), everything was quiet and calm. Yeast at the bottom, water on top. I only have dark rye malt (after that I was very interested in white malt, and I already found where to buy it). Therefore, the growth of the dough was very surprised and pleased. In general, the bread turned out to be easy to prepare. Tastes pretty well and looks pretty.
