Spicy eggplant caviar

Ingredients

eggplant 1 kg
Sweet pepper 1 kg
carrot 1 kg
garlic 1 head
onion 1 pc. (Large)
tomatoes (or tomato juice) 600 gr.
salt pepper taste
vinegar 1-2 tbsp. l.
olive (sunflower or other) taste

Cooking method

  • Boil eggplants and peppers in water until tender, put them under oppression for 2 hours. Then peel and twist in a meat grinder. Peel the tomatoes, onions and also twist in a meat grinder. Peel and finely grate carrots. Peel and squeeze the garlic in a garlic press. Mix everything, salt and pepper to taste, add vinegar and olive oil (about 0.5 - 1 glass). Put everything in a jar (for convenience) and refrigerate. The caviar is ready, but tastier in a day or more.

Note

Eggplant and peppers can be baked in the oven.
If you do not put carrots, garlic and vinegar, then you get delicate dietary caviar. In such caviar, butter is placed only before serving.
Caviar is good both on its own and as a salad or addition to pasta.

After tasting the caviar, I was extremely disappointed, because the caviar tasted just raw. I realized that no one would eat it, I decided to fry it all the same in a pan. The caviar released a lot of juice. Fried until tender. And still, the carrots were clearly semi-raw. It tastes very, very sour, and this is without the addition of vinegar, as written in the recipe. : girl_sad: On the contrary, I added 1 tbsp. a spoonful of sugar. The taste remained sour. I also didn't like the fact of scrolling vegetables through a meat grinder, because traditionally I always cooked in small pieces. This I write strictly my opinion and do not want to offend the author. : - \ I always cook caviar with a lot of onions with baked peppers and boiled eggplants. It turns out sweet, tender and very tasty caviar. I don't add carrots at all. I could not change the usual recipe for caviar, I really wanted to cook something new. My husband took me to work, saved the day.
