Cooking method

  • Midsummer is an abundance of vegetables. And, of course, the minestrone, in which you can put all the vegetables at once, and in which all the colors and aromas of summer are collected, will come just in time. It can be cooked all summer long, changing the composition, but adhering to the technology, and, I assure you, this soup will never get bored !!!
  • Three rules, subject to which, the soup has the right to be called "Minestrone":
  • 1. The number of vegetables for the soup must be at least ten.
  • Of course, you can cook the soup with a smaller amount, and it will also be very tasty. But then it will be ala-minestrone or minestrone in Russian
  • I got eleven.
  • 2. The main subtlety in the technology is that the vegetables are first stewed for a long time, then they are poured with broth or water, everything together is brought to a boil, herbs are added, three more minutes - and you're done. Be sure to let it brew!
  • 3. There should be a lot of herbs-spices with an Italian bias! What an Italian without herbs!
  • In CB 6501 there is an amazing mode - "Baby food", in which vitamins and aromas are preserved under high pressure. This mode is the best fit for cooking minestrone.
  • Well, let's get started.
  • Prepare vegetables in advance.

  • Wash, peel, cut into small cubes. Roots - carrots, celery and, if available, parsley root - can be grated on a coarse grater.
  • I crushed the garlic with the flat side of a knife and chopped finely, so there will be more aroma than through a garlic press.
  • Broccoli and cauliflower disassembled into small inflorescences. And the stems on which these inflorescences were kept (in the photo - on the left) were also finely chopped.

  • Pour vegetable oil at the bottom of the saucepan, the handle on the lid is turned to the open lock position. Turn on the "Fry" mode. And gradually fry vegetables with the lid open for 15 minutes. We lay vegetables according to the degree of hardness, in descending order. We stir with a spatula all the time.
  • First, onion + garlic until golden brown,

  • then potatoes, after 2 minutes - carrots and celery root, then broccoli and cauliflower, then pepper, eggplant, zucchini, and last of all - tomatoes. Add washed lentils, mix.

  • We close the lid. "Baby food" mode. By default, time is 20 minutes, pressure is 70.
  • Boil 1 liter of water. Chop the washed greens finely.
  • The bell rang. Slowly release the pressure by pressing the gray steam button on the handle.
  • We open the lid. Salt, pepper, add greens.

  • Add 1 liter of hot water or any broth. We close the lid. "Baby food" mode. Using the timer button, set the time - 3 minutes. Start. When finished, release the pressure. Let it brew for a few minutes

  • pour on plates. Add fresh herbs, season with cream or sour cream, or sprinkle with grated parmesan.

  • Tips for Russian reality:
  • Parmesan can be replaced with any hard, spicy cheese. Nr, Dutch. Grate it in advance on a fine grater so that it dries up, and add to plates when serving
  • If you are going to add beets to the soup, then add a little of it so that it does not overwhelm other vegetables with its taste.
  • Leaf celery also has a root that can be grated into soup
  • Let me remind you that pumpkin grows in the garden! And you can buy ginger root ... Well, I won't talk about asparagus, it bites! Green beans come in handy too! And beet leaves! Or maybe someone is growing a turnip or rutabaga?
  • By the way, I didn't count the lentils, but in vain! Legumes count too! So my soup is made from 12 vegetables!

The classic thick Italian soup made from fresh vegetables is the minestrone soup. If we translate the name from Italian into Russian, then this is not even a soup, but a soup, so it should be rich, thick, dense. Therefore, the more vegetables there are in the soup, the better. Probably, if there is a soup, and even such a famous one as minestrone, then there must be a recipe for its preparation? You are wrong! Minestrone is a seasonal soup. What vegetables are there, they are added to the soup. Add to this the imagination of the cook, the preferences of various regions of Italy, and you will understand that there are exactly as many recipes for minestrone as there are chefs who cook it. And even a little more.
Italians are very fond of adding tomatoes to the minestrone. They can, of course, cook without them, then it will turn out "white" minestrone. Never ask if a vegetable can be added to a minestrone, just add it and that's it. But if there are less than ten vegetables, then this soup has no right to be called minestrone.
In accordance with the recipe for cooking minestrone, some vegetables are pre-sautéed in vegetable oil before being added to the soup, while the soup itself is boiled with a little water, in fact, the vegetables are stewed. And they extinguish it for a long time, about three hours. More is possible. They say that it used to be prescribed to cook it for 5-6 hours, but the pace of life is growing, so at least at least three hours.
The recipe for cooking minestrone does not at all prohibit cooking soup in broth: chicken or meat. Depending on the recipe, minestrone adds meat, cheese dressing, prosciutto slices.
Almost every minestrone recipe involves the addition of legumes to it. Moreover, it can be both fresh and dry peas and beans, beans or lentils. Fresh legumes boil down quickly and are therefore not pre-processed. But if you decide to use dried legumes for cooking, then you need to soak them in advance, and they cook them much longer.
Some minestrone recipes recommend enhancing the taste of the soup by adding hot pepper, garlic, and ginger. And, of course, what kind of Italian soup can do without herbs? Dill, basil, thyme, oregano are also included in the minestrone recipe.
Nutritionists say that minestrone contains so few calories that much more calories are spent on its digestion than is contained in a bowl of soup, and they recommend cooking minestrone for those who wish to lose weight.
