Bread with whole grain flour, flax and caraway seeds

Ingredients

Chatterbox:
Warm water 200 g
Wheat flour (I have 1c) 100 g
Pressed yeast 5 g
Sugar 15 g
Dough:
Chatterbox all
Wheat flour (I have 1c) 150 g
Whole grain wheat flour 150 g
Rye flour 100 g
Salt 9 g
Flax seeds 50 g
Water 150 g (+25 g *)

Cooking method

  • For a chatterbox, heat the water to 37C. Dissolve yeast and sugar, add flour, beat and leave for 20 minutes.
  • Fry flax seeds in a dry frying pan until they crackle. Cool down. I got a mixture of flax seeds, caraway seeds and kalonji seeds.
  • For the dough, pour 150 g of water into the miter box (leave 25 g for final kneading), add flour, salt. Mix on low speed for 2 minutes. Leave on for 20 minutes.
  • Knead at high speed for 5 minutes. * Add the remaining (25 g) water if necessary. I didn’t add. The dough is soft, not sticking to the sides of the bowl.
  • Add seeds, mix on low speed for 2 minutes.
  • Fold the dough in an envelope, place in a greased container, cover and leave for 30 minutes at 30C.
  • Then knead the dough, fold in an envelope, return to the container and leave to ferment for 60 minutes at 30C.
  • After a lapse of time, knead the dough, roll into a ball and leave for 10 minutes.
  • Shape the bread, place it in a proofing basket with the seam up, cover with foil and leave for 40-60 minutes at 30C.
  • Before baking, cut and sprinkle with water.
  • Preheat the oven with the stone to 220C.
  • Bake until tender for 30-40 minutes. The exact time depends on your oven.
  • Cool on a wire rack without a towel.

  • Very aromatic and delicious bread. I put the kalonji seeds by mistake, confused it with black cumin, and thought that my bread would be rejected. But no, my husband even asked for more. Said these black dots are delicious.

Note

To convert to your size, it is convenient to use baking percentages:
wheat flour, premium or 1c - 50%
whole grain wheat flour - 30%
rye flour - 20%
sugar - 3%
flax seeds - 10-15%
salt - 1.8%
pressed yeast - 1%
water - 75% (I have 70%)
