Ingredients

flour, premium 520g
pressed yeast 14g
salt 1/4 Art. l. from HP
water 200-210ml
sugar 3 tbsp. l. from HP
butter soft 37g
eggs 2 medium

Cooking method

  • Cooking dough:
  • Add 1/2 tbsp to 100ml of warm water. spoons of sugar and yeast. Stir and set to rise in a warm place for 1 hour.
  • Sift flour, add salt and sugar to it.
  • Break eggs into a cup and beat lightly with a fork.
  • Pour the dough, the remaining water and eggs into the flour mixture, leaving a little egg chatter to grease the challah before baking.
  • We knead the dough. I kneaded in a bread maker on the "Pizza" mode.
  • At the end of kneading, put the dough in a bowl dusted with flour and let it stand for three hours, with the first kneading after 1 hour, the second kneading after 2 hours.
  • Form a challah from the finished dough: divide the dough into three equal parts and braid.
  • Put on a proofer, after sprinkling with water and covered with foil, for 1 hour at a temperature of 40C.
  • Before baking, grease the challah with an egg and sprinkle with sesame seeds or poppy seeds if desired.
  • Preheat the oven to 180C and bake for 40 minutes until tender. Focus on your oven.
