Croutons, sweet (Cantuccini)

Ingredients

Flour 360 g
Salt pinch
Sugar 220 g
Egg 4 things.
Baking powder 1 tsp
Almond 200 g
Zest of 2 lemons
Vanillin
Yolk, powdered sugar for brushing

Cooking method

  • Peel the almonds as follows. Pour boiling water over it in a saucepan, put it on fire, and boil for 1 minute. Remove from heat, cover with cold water. After that, the skin is easily removed.
  • Then fry the almonds for about 5 minutes. in a frying pan.
  • Beat egg whites with salt, add sugar, beat again. Beat the yolk in a separate bowl. Add the yolks to the whites with a spoon, then add vanillin, zest and almonds, mix. Then gradually, in small portions, add flour, previously mixed with baking powder, and knead the dough. If the dough is too soft, add more flour.
  • Roll the dough with a 2 cm diameter roller, place on a greased baking sheet (I baked on a silicone mat without greasing). Beat the egg yolk with a small amount of icing sugar, grease the roller and bake in an oven preheated to 180C until light golden for 30-35 minutes. Remove the roller from the oven, cool slightly. Cut another hot roller diagonally into slices 1 cm thick (I think I need a little thinner, about 7 mm), put them back on a baking sheet and continue to bake until a rich golden color for about 10 minutes.

Advice from the Grocery Book:
Hard "aged" cantuccini are usually served with sweet dessert wine or coffee - and eaten dipped directly into a glass or cup.
Cantuccini can be stored for several months.
