Azu in Tatar style (multicooker-pressure cooker Brand 6051)

Ingredients

Beef ~ 500 gr.
Bulb onions 2 pcs.
Tomatoes 3 pcs.
Potatoes 5-6 pcs.
Pickled cucumber 3 pcs.
Bouillon 200 ml.
Garlic 2-3 teeth
Fresh herbs (dill, parsley, cilantro)
Ghee butter ~ 1.5 tbsp. l.
Salt, black pepper, a little sugar

Cooking method

  • Beat off the beef and cut into long thin strips.
  • Heat ghee in a bowl of CB on the Roasting (I immediately set the time 20 minutes and was not mistaken). Fry the beef noodles until all the liquid has evaporated and a little more, so that the meat appears color.
  • Cut the onion into half rings. Send to meat. Fry for a couple of minutes, until the onions are transparent.
  • Add tomatoes (peel off and cut not very finely) and cucumbers (cut into strips). Simmer until the tomatoes have dispersed and have a pleasant reddish color. (You can add 0.5-1 tbsp. L. Tomato paste).
  • Peel the potatoes and cut into large cubes. (For the correct Azu in Tatar style, the potatoes must be fried in ghee until half cooked.) At the end of the FRYING mode, put the potatoes in the bowl, pour a glass of broth, salt and pepper to taste, and turn on the mode EXTINGUISHING time 20 minutes pressure 50 kPa, cook until signal.
  • After the signal, release the pressure using the button on the handle. Add chopped garlic and herbs and close the lid for another 5 minutes. The hot, almost boiling contents of the bowl will block the lid again. Let it brew a little and you can start your meal.

Azu is a traditional Tatar dish made from fried pieces of meat (beef or young horse meat) stewed with tomatoes, onions, potatoes (sometimes with the addition of pickled cucumbers) in a spicy sauce.
