Spicy eggplants with ginger in a Redmond slow cooker

Ingredients

eggplant 4 things
ginger ~ 4cm
garlic 3 cloves
soy sauce 2-3 st. l
vegetable oil
hot red pepper taste
salt taste

Cooking method

  • There are many great eggplant recipes on the site. And yet I decided to add another, in my opinion, very worthy recipe.
  • Finely chop the garlic, cut the ginger root into thin strips. If you don't have fresh ginger, you can use ground ginger. Peel the eggplant in strips, that is, cut a strip 1-1.5 centimeters wide, leave a strip of 1-1.5 centimeters with the skin. Then cut it into large pieces.
  • Set the "Fry" program for 20 minutes. Pour vegetable oil into a MV saucepan, add finely chopped garlic and ginger, and fry for a few minutes. Add eggplants and fry, stirring occasionally, until tender. Add soy sauce and hot red pepper, stir and salt if necessary. I didn't salt, soy sauce is enough for me.
  • You can sprinkle with green onions or any herbs to your taste, or you can add nothing else.

When frying, they really did not absorb much oil, it was fried perfectly, but the egg stuck to the pieces and somehow it turned out harshly for me, maybe I just overcooked it for joy. I was glad that the eggplants did not darken overnight.

The eggplants are excellent, thanks Galina !!! I had to add more butter, the recipe was printed before discussions. And yet, I would remove the ginger after roasting. But I've never gotten such delicious eggplants.
