Cooking method

  • Nata and I could not decide in any way to which section it is better to attribute baked goods in a jar to cupcakes or pies. We decided to go for pies, since no one calls such pastries muffins. Rolls, pies, cakes, whatever, but for some reason not cupcakes. For those. who loves cupcakes more suggest the same option, but cupcakes. Well, I really liked this pastry, juicy, with the sourness of fresh apricots.
    Preparation
  • Melt the butter and cool a little.
  • Beat eggs with sugar with a mixer.
  • Mix flour with baking powder and add to egg mixture. Stir with a spatula from top to bottom.
  • Then add the butter and milk slowly. Stir until smooth.
  • At the end add apricot jam (or jam), sliced apricot pieces and chocolate. Stir until evenly distributed.
  • You bake in an oven preheated to 180 C for 35 minutes.
  • Decorate marshmallow cream.
  • To do this: lightly beat the whites with a mixer, add powdered sugar and baking powder. Place the cup in a water bath and beat with a mixer for 10-15 minutes.
  • Add citric acid at the end.
  • Fill a pastry bag with cream and decorate the cupcakes.
  • I added yellow dye so that there was a piece of the sun on top too)

What an interesting recipe !!!
But I have a question - what role does the baking powder play in the cream?
... Let's go the logical way, what components are present in the baking powder? Roughly speaking, soda and citric acid. Citric acid, in addition to giving sourness, thickens the product. and soda loosens. All together makes the product more airy and dense. Here is my opinion, but it is not the last resort.
SanechkaA, I also like them without cream. This apricot sourness ... But a cream for a complete picture of sunlight Even the eye pleases, and this is also important!

I'm just such a lazy decorating

Sanechka, and you try. It’s not difficult, but it’s very pleasant later:

I also really liked the recipe. I can't understand why the cream is marshmallow? It looks more like a meringue. The recipe for the cream suits me perfectly, just very curious.
Natali06
Natickhow do we prepare meringue? Beat, dry. You don't need to dry anything here. It gets dense and dry like that. And there is no need to arrange quiet terrorism in the oven!
And thank you for your feedback!
