Ingredients

Dough:
Milk + water 280 g
Sugar 2h l.
Dry yeast 4 g
Wheat flour 100 g
Dough:
Opara all
Cream cheese Almette 125 g
Melt butter 45 g
Wheat flour 400 g
Salt pinch
Vanillin 1 \ 4h. l.
Sugar 100 g
Filling (optional):
Poppy, cinnamon, nuts, jam
Milk for lubrication
Sugar for sprinkling

Cooking method

  • For dough, heat water and milk to 40C. Add sugar, flour. yeast. Beat. Cover and leave for 20-30 minutes.
  • For the dough, add all the ingredients to the dough. Stir on low speed for 2 minutes. Then knead until smooth for 7 minutes at high speed.
  • Fold the dough in an envelope, place in a greased container, cover and leave for 30 minutes.
  • Then knead the dough, fold in an envelope, return to the container and leave for 30 minutes.
  • Then knead the dough, roll it out on a table sprinkled with pear flour. Sprinkle with cinnamon or poppy seeds. I do not eat either one or the other, so I smeared it with jam. Cut into strips, not cutting through completely. Roll from the uncut edge into a roll. Wrap in a spiral and put into shape. I have silicone, d24cm.

  • Cover and leave for final proofing for 45-60 minutes.
  • Brush with milk, sprinkle with sugar before baking.
  • Place the mold in a cold oven. Turn on 200C and bake until tender. The exact time depends on your oven. I have 45 minutes.

  • I saw such a molding and wanted to try it for a long time. But I don't eat either cinnamon or poppy seeds, so I had to use liquid apple jam. Because of this, the crumb turned out to be moist. Half is gone. Happy Holidays everyone!
