Ingredients

Chatterbox:
Water 300 g
Dry yeast (I have a Saf-moment) 3 g
Dark molasses 10 g
Sugar 20 g
Wheat flour 1 grade 100 g
Dough:
Chatterbox all
Wheat flour 1 grade 400 g
Softened butter 40 g
Salt 8 g

Cooking method

  • For a talker, heat the water together with sugar and molasses to 50C. Add flour, yeast, beat until smooth, cover and leave for 20 minutes.
  • For the dough, add flour to the mash. Knead for 2 minutes at 1 speed and 5 minutes at 2 speeds.
  • Add oil, salt. Knead for 2 minutes at 2 speeds.
  • Fold the dough in an envelope, place in a greased container. cover and leave for 90 minutes at 30C.
  • Then knead the dough, roll into a ball, cover and leave for 10 minutes.
  • Roll up into a tight ball, place with the seam upwards in the baffle basket. Cover and leave for 60 minutes at room temperature.
  • Before baking, turn the workpiece over, make cuts, sprinkle with water.
  • Preheat the oven with the stone to 250C.
  • Bake for the first 5-10 minutes at 250C, then lower the temperature to 200C and bake until tender. The exact time depends on your oven. My total time was 45 minutes.
