Bread Cream (Steba DD1 pressure cooker)

Ingredients

Flour in \ s 500 g
Warm water 200 ml
Cream 10% 100 ml
Butter 25-30 gr
Salt 1 tsp
Sugar 1 tbsp
Fresh yeast press 10 g
Quail eggs 3 pcs

Cooking method

  • I came up with the recipe on the fly))
  • The dough can be kneaded in hp in the Dough mode or in the food processor. I was kneading in my Boshik.
  • 2 kneads in a combine and 2 rise, then put it on a board and formed a ball and put a Teflon pressure cooker in the bowl. Grease the bowl with butter.
  • We laid the dough, closed the lid and turned on the Heating mode for 30 g for 30 minutes. The dough was left to rise.
  • After the end of heating, we look, if the bread has risen well, then put the lid on the sideways and turn on the Roasting mode for 30 minutes.
  • After 30 minutes, we open the lid and our bread has grown wow !!

  • We take it out and turn it over and turn on the Roasting mode for another 15 minutes to brown the other side of the bread.

According to this recipe, I always succeed in a loaf.

Starter preparation:
2st. spoons of leaven
150g water
150 gr rye flour
Leave on for 16 hours. As the leaven falls off (eats everything), you can put bread. It turns out 350 g of ready-made sourdough. Therefore, for my version, 100 grams of water and flour are needed more.

300g sourdough
200g wheat flour
130 gr rye flour
10g salt
1 st. l. rast oil
1 st. spoonful of malt
230 grams of water. This is an original recipe taken from one girl's blog. I altered it a little for myself as I wanted a more rye taste.

This is my recipe

400 gr sourdough
200 gr rye flour
40 grams of wheat (but when forming a bun, sometimes I add 1-2 tablespoons more)
10 g salt
2 tbsp. l mustard oil
1 st. spoonful of malt
125 g water

I knead on the dough for 15 minutes.
I give you a rest for 30 minutes
and roll over to the cartoon. Heating program 38 degrees 4 hours. After 2 hours, the dough can be checked for rising. Usually it rises to the 5th mark of the Teflon bowl, but I have a relatively young starter.
Then bake for 30 minutes with the valve open and the lid turned.
I do not turn the top over for frying. But this is not for everybody
do not judge strictly. This is all that remains of the bread, but the structure of the crumb and the color of the loaf are visible.
