Ingredients

Cakes:
eggs 5 pieces
sugar 0.5 st
flour 1 st
raisins 1 st
walnuts 1 st
liquid honey 0.5 st
soda 1 tsp no top
Cream:
Sour cream 35-40% or homemade fat 250 ml
Sour cream 10-20% 250 ml
Sugar 1 st
Lemon juice (optional) 1-2 tsp

Cooking method

  • This cake is a real magic combination of tenderness, fluffiness and a delicious combination of nuts, raisins and honey!
  • A very important point: the cake is very easy to prepare and always turns out to be five-plus!
  • Cakes:
  • Rinse and dry raisins, chop walnuts (in a mixer grinder, grind in a mortar or through a meat grinder).
  • Beat eggs with sugar not much, you can just mix well with a spoon or fork.
  • Mix the egg-sugar mixture with raisins, nuts, honey, flour and soda. Mix well and refrigerate for 6-8 hours (I do it at night before baking).
  • Preheat the oven to 220 ° C.
  • We take out the mass from the refrigerator, mix.
  • In a greased form (I do not grease, but cover it with baking paper) in the middle we spread several large spoons of dough, it is viscous and does not spill, it is not worth worrying that the dough has not reached the edges of the mold, the dough will grow well during baking, fill the form and will about 2-3 centimeters in height. I have a shape of 26 cm in diameter, it turns out 3-4 cakes (sometimes a little dough remains, I bake small cupcakes from it).
  • My cakes are baked in 10-12 minutes. You need to get it out of the oven when the cakes are dark brown and there will be a smell of burning honey.
  • Cool the cakes.
  • Cream:
  • Beat the fatty sour cream (cream) with sugar, then gradually add the sour cream to 20% fat. The cream should turn out to be soft, flowing, bloody and not holding its shape. The cream should be sweet and sour, if the cream is sweet, then at the end acidify it with 1-2 teaspoons of lemon juice.
  • Assembling the cake:
  • In a deep saucepan of a suitable diameter (I assemble in a split form, in which I bake the cakes), we collect easily: crust-cream-crust-cream, etc. If you make in a pan with a larger diameter than ready-made cakes, then do not press on the cakes so that the cream did not flow out.
  • Let the cake soak at room temperature for a couple of hours, then send it to the refrigerator.
  • We decorate to your liking.
