Chickpeas with vegetables

Ingredients

chickpea 150 g
eggplant (medium) 2 pcs
bell pepper red 2 pcs
onion (large) 1 PC
garlic 2-3 cloves
walnuts 30 g
fresh ginger root 2-3 cm
coriander 0.5 h l
mixture of four peppers 0.5 h l
cubeb pepper 3-4 pcs
chili pepper (optional) taste
turmeric on the tip of a knife
tomato juice 150-200 ml
salt, sugar taste
fresh parsley or cilantro
olive oil for frying

Cooking method

  • 1. Soak the chickpeas for 4-5 hours, rinse, pour in 2 multi-glasses of water and cook on the "Groats" program, time 15 minutes.
  • 2. Cut vegetables into cubes, finely chop the garlic, chop the ginger into thin strips, crush the pepper mixture in a mortar.
  • 3. Switch on the "Fry" program, time 15 minutes. Pour coriander and coarsely ground nuts on the bottom and fry for 2-3 minutes. Pour olive oil into a bowl, add onion, garlic and ginger and fry everything together for another five minutes, then add pepper and eggplant and, stirring, fry until the end of the program.
  • 4. Add boiled chickpeas to the vegetable mixture, pour in tomato juice and add all the spices. Switch on the "Extinguishing" program, time 20 minutes. Sprinkle the finished dish with fresh herbs and serve.

Olya, no. I cooked until half cooked, taking into account the subsequent stewing. But, I think, you can change the cooking algorithm - cook the chickpeas until cooked (Irina is right, thirty minutes), and stew with vegetables for ten minutes.


And I do not soak chickpeas if I cook them in a pressure cooker. I put 30 minutes to cook it.
