Ingredients

For dough:
flour 140 g
water (25C) 84 g
fresh yeast 3.5 g
For the test:
flour 204 g
water (35C) 147 g
salt 6 g
dough (biga) all

Cooking method

  • 1. For dough, dissolve the yeast in water, mix with flour and knead for three minutes, round the resulting dough. Put the dough in the refrigerator for 12-14 hours.
  • 2. Mix the remaining flour with salt, heat the water to 35C. Remove the dough from the refrigerator, break it into small pieces with your hands, add water and beat until smooth at medium speed. Then add flour in several steps and knead at low speed for three minutes. Leave the finished dough to rise for 90 minutes. It turns out to be quite liquid, viscous, it does not assemble into a classic bun.
  • 3. Gently place the finished dough on a cutting mat abundantly floured and stretch it with your hands into a strip 10-12 cm wide and about one and a half thick. Divide the dough in two, transfer to a baking sheet (I bake in a large-diameter perforated pizza pan) and leave to proof for 30 minutes. Dust with flour or sprinkle with sesame seeds on top.
  • 4. Bake at 230C with steam for the first 10 minutes, then lower the temperature to 180C and bring to readiness (another 10-15 minutes). Cool on a wire rack.
