Creamy pistachio ice cream (E. Molokhavets, 1861, recipe # 1902) in Brand ice cream

Ingredients

Cream 10% 500 ml
Peeled pistachios 70 g
Yolks 3 pcs
Sugar 100 g
Vanillin
Spinach 1 tbsp. l.

Cooking method

  • Peel the pistachios, grind them as fine as possible in a blender. Boil the spinach, rub through the finest sieve. Wash the yolks white with sugar. Mix cream, yolk mass, add vanillin, heat while stirring over the fire until thickened. Cool the mass, transfer to an ice cream maker. Bon appetit: flowers:
  • I faced a problem, well, we don't have unsalted pistachios, so I bought 150 grams of salted ones, and 70 grams of the kernels themselves came out. Salinity in ice cream does not interfere at all!

Note

Original recipe: Peel 1/4 pound pistachios from the topmost skin, however, leaving green skin, grind in a mortar as fine as possible with 1 spoonful of orange blossom water *, pour in 3 cups of cream, stir; Grind 3 yolks white with sugar, mix with cream and a teaspoon of vanilla powder, put on the stove, stir until thickened, strain, rub through a sieve, put 1 spoon through the most frequent sieve of mashed, boiled spinach.

Serve 6 people: 1/4 pound pistachios, 3 cups in cream, 1 teaspoon orange blossom water *, 1 cup, i.e. 1/2 pound sugar, 3/4 vershok ** an inch of vanilla, 4-5 yolks, about 1/4 spinach 2 pounds. Salt 3 lb., i.e. 6 cups.

Marish, I think it will work. At the dawn of my Soviet youth, we made ice cream and parfait according to E. Molokhavets simply by freezing the mass in the freezer. This, of course, is long, but the result is almost the same.
