This dough recipe came to me through mailings and I immediately became interested in it. And just for yesterday, I had dumplings planned in the morning. She quickly drove for soda and started the process. I kneaded the dough in HP. According to my instructions for HP, I first poured liquid ingredients, then poured 3.5 cups of flour, salt and sugar on top. When she began to knead closely, she added flour to the eye.
She wrapped the finished dough in foil and sent it to the refrigerator, since the sculpting of dumplings was scheduled for the evening.
The dough was rolled out on a dough rolling machine. I decided to sculpt dumplings with pockets with video, I still want to learn how to cut them so cleverly.
Now impressions of the test.
The dough is really soft, elastic, rolls well and sticks well. But ... with flour, I nevertheless slightly crushed (not as always, but less). The author of the dough promises an absolutely clean kitchen without flour. Maybe I should have added more flour during kneading. It's just that when manually rolling it may not have been possible not to crush it with flour, but the dough rolling machine could not do without it.

We all use different flours, and each flour absorbs a different amount of moisture. The dough should be firm, you will feel it yourself. Even if they didn't add up a bit of flour, like me, nothing terrible will happen. I lightly dust the dough sheets with flour when rolling.
