Quinoa Corn Orange Muffins

Quinoa Corn Orange Muffins

Ingredients

quinoa (cooked) 1 1/2 cups
corn flour 1 1/4 cups
baking powder 2 tsp
salt 1/2 tsp
honey 1/3 cup
vegetable oil 2 tbsp. l
eggs 2 pcs. middle
dates or prunes 2/3 cup
orange 1 large or 2 medium

Cooking method

  • Prepare quinoa. Rinse the groats well. For 1 part of cereal, take 2 parts of water and cook for 15–20 minutes until the water is completely absorbed.
  • Grate the orange zest (you need 2 teaspoons of the zest). Peel the oranges and chop them. Chop dates or prunes finely.
  • Mix dry ingredients. Combine cooked quinoa, cornmeal, baking powder, salt and cinnamon.
  • Mix honey and eggs separately, add oil. Add chopped oranges, dates and zest here, mix. Add the resulting mixture to dry ingredients and mix well until smooth. If the dough is too thin (this depends on how juicy the oranges are), add a little cornmeal.
  • Fill the forms 2/3 full with dough. Bake in an oven preheated to 170 degrees for 30-40 minutes, or until the tops of the muffins are golden brown. If the cupcakes aren't ready yet, you can cover them with foil to keep them dry.
  • Serve completely cooled.

Girls, thanks for the comment. I forgot to add oranges last night. Corrected.
The color of the muffins is due to the cornmeal and oranges. The recipe actually indicated 3 oranges, but it seemed to me that this is a lot, I took less. The muffins are flavorful, hearty and slightly crispy from the quinoa. They can easily replace breakfast, especially since they are high in protein.
