Mint cookies "Mojito"

Mint Mojito cookies

Ingredients

butter 150 g
powdered sugar 100 g
wheat flour 270 g
corn starch 30 g
light rum (replaced with mint liqueur) 2 tbsp. l
lime juice and zest 1 PC.
fresh mint 30-35 gr
For sprinkling:
dried mint 1h l
powdered sugar 1h l

Cooking method

  • Beat the softened butter with powdered sugar.
  • Add chopped mint, lime juice and zest (can be substituted with lemon), mint liqueur.
  • Sift flour and starch. And stir into the oil mixture with a mixer at minimum speed.
  • Roll the dough into a ball and then into a sausage. Wrap in paper (cling film) and refrigerate for at least 30 minutes. I had the dough in the refrigerator for a couple of hours.
  • Grind dried mint, mix it with powdered sugar and roll the dough in this mixture. Cut it into circles.
  • Place on a baking sheet lined with baking paper.
  • Bake at 200˚ for 10-15 minutes. Cool on a wire rack.

Note

The result is a crisp, fragrant cookie with a distinct mint flavor and a subtle lime flavor! While the cookies were baking through the apartment, such a delicate aroma of mint spread, it smelled right in the summer! Delicious cookies!
