Carbonade "Delicate" (baked in a Brand 35128 airfryer)

Gentle carbonade (baked in Brand 35128 airfryer)

Ingredients

Pork chop 1.5KG
Bulb onions 1-2 pcs.
Garlic 2-3 teeth
Cucumber pickle * 100 ml
Salt, black pepper taste

Cooking method

  • Wash the carbonate and pat dry with kitchen towels.
  • Season with salt and pepper to taste (photo 1).
  • Place the meat in a pickling container (I used a bag).
  • Place the onion rings over the meat (photo 2).
  • Pour in the brine and distribute over the meat (photo 3).
  • Remove the meat in the cold for 5-6 hours at least (I withstood more than a day). In the middle of time, turn the meat over so that the other side of the piece is in the brine.
  • Remove the meat from the bag. Peel off the onion and cover with garlic cloves, wrap in parchment in 3-4 layers, bending the edges so that the juice does not flow out during baking. (I wrote more about this in the recipe Carbonade "Fragrant")
  • Place the "loaf" on the lower grill of the airfryer (photo 4) and bake at 180 * C for 1 hour 30 minutes.
  • Cool to room temperature and refrigerate for ripening for a few hours (do not unfold the parchment).

Note

The brine, quite spicy and aromatic, contains: sugar, salt, vinegar, garlic, peppercorns, dill inflorescences, currant leaves, Ogenek pepper, mustard seed.




Carbonade - pork (tenderloin or fillet) cooked with steam or dry hot air, intended for storage. Before cooking, the meat is thoroughly breaded with flour, sprinkled with salt, pepper, etc.
