Ingredients

Dry sourdough Agram light or Dark 1 tbsp. l or 1%
Panifarin 4 tsp or 2%
Dry kvass (fermented red malt) 4 tbsp. l.
Water for brewing malt (boiling water) 80 ml
The water is cold 370 ml
Sunflower, flax, sesame seeds

Cooking method

  • Brew the malt with boiling water, let it brew for about 20 minutes, mix with the rest of the water before adding it to the bucket, thus cooling it. I have a Panasonic SD-2501 bread machine (with a dispenser). The order of laying the ingredients, according to the instructions for the bread maker. Add rye or bran to the dough immediately. Pour the seeds into the dispenser, if there is none, add them on a signal. I baked in 2 modes, since in the Rye mode the baking time was 60 minutes, this was not enough. I used first the Dough mode: Basic with raisins, then Baking for 1 hour 25 minutes. Spatula - for rye flour.
  • During kneading, after 5 minutes from the beginning, I helped with a narrow spatula, since during the first experiment a section of unmixed flour remained in the corner. She just helped to collect flour from the corners and left the oven alone. YES! A small note. If you have a stove with a dispenser, then pour the seeds into the dispenser after you "help" the kneading, they will still be added towards the end. If added immediately, small sesame and flax seeds may fall past the bucket when lifting the lid of the bread maker. It's okay, but you will have to collect them later when you wash the bakery. After the end of the rise of the dough, I open the bread maker and "wash" the dough with wet hands to smooth the top a little, and turn on the baking. After baking, let the bread cool in a towel for 2 hours (or as long as you stand).
