dry yeast 1 + 3/4 tsp
sour cream 1/2 cup
sugar 1/3 cup
salt 1 tsp
large egg 1 PC
vegetable oil 2 tbsp. l.
melted butter 2 tbsp. l.
wheat flour 3-3 + 1/4 cups
grated apples 2 glasses
lemon juice 2 tbsp. l.
Brown sugar 3/4 cup
cinnamon 1 tbsp. l.
nutmeg 1/4 tsp
soft butter 1/4 cup
powdered sugar 2 glasses
vanilla

Cooking method

  • Dough
  • 1. Dissolve yeast in warm milk, leave for 5-10 minutes. Meanwhile, using a mixer, mix the rest of the ingredients for the dough: sour cream, 1/3 cup sugar, salt, egg, vegetable and melted butter, vanillin. Add milk with yeast to this mixture.

  • 2. First add 1.5 cups of flour to the mixture and mix.

  • 3. Then add another 1.5 cups of flour and mix well again. In my case, 3 cups of flour was enough and 1/4 cup just went for sprinkling. Place the dough on a floured surface.

  • 4. Knead the dough with your hands, it should be soft and elastic, the main thing is not to overdo it with flour.

  • 5. Remove the dough in a warm place for 1.5-2 hours. In the meantime, peel and finely grate the apples, you should get 2 cups, it took me about 4 medium apples. Mix apples with 2 tablespoons of lemon juice.

  • 6. In a separate cup, combine cinnamon, nutmeg and 3/4 cup brown sugar (I didn't have it, I used regular sugar).

  • 7. The dough came up and increased in volume by about 2 times.

  • 8. Roll out the dough on a floured surface into a rectangle (the author has one large rectangle about 50X30 cm). I did it in 2 sets, I didn't measure the size. Brush the dough with soft butter.

  • 9. Sprinkle with cinnamon sugar on top.

  • 10. Squeeze the apples lightly and spread over the entire surface of the dough. Preheat the oven to 190C.

  • 11. Roll the dough into a roll and cut into slices about 4 cm wide.

  • 12. Arrange the pieces into muffin tins (I didn't have paper ones, I used ceramic ones for pudding) and put them in a warm place to proof for about 30 minutes.

  • 13. Bake for about 15-20 minutes at 190C.

  • 14. Cool muffins slightly and cover with glaze: mix lemon juice, butter and icing sugar and grind well.

Many will probably wonder why these are muffin buns. And because the dough is yeast, but the apples soak it with their juice and taste that the dough becomes very soft, as we are used to seeing it in muffins.
