Ingredients

Jerusalem artichoke 600 g
Potatoes 4 things
Pumpkin 600 g
Garlic 2 pcs
Olive oil 30 ml
Vegetable broth 1 l
Pistachios 50 g
Parsley

Cooking method

  • Jerusalem artichokes and roasted pumpkin double layer cream soup
  • Peel the pumpkin and potatoes. Cut into cubes, add olive oil and stir.

  • Bake in the oven at 1700From 40-45 minutes until golden brown and crispy.
  • Finely chop the garlic and lightly fry in olive oil.

Note

There was no salt or pepper in the recipe. You can completely do without them. I only slightly salted Jerusalem artichoke cream soup. I did not add spices or salt to the pumpkin-potato mixture.
The soup tastes very interesting. First, a sweet top layer with nuts and zest, and then a spicy (due to garlic) bottom layer of Jerusalem artichoke.
Great soup for a healthy diet and more. I liked it very much, I recommend it!

I only slightly modified it, because the excess broccoli was lying around, I had to attach it and sesame seeds instead of pistachios (I was too lazy to go to the store).But these "violations" did not spoil the soup at all, the garlic in the topinarbur puree gives such a "cozy touch" !!!
