Fish in parchment in Steba DD1 ECO

Ingredients

Shogi fillet 1 kg
Leek 1 PC
Celery 1 stem
Cauliflower and broccoli 100 g each
Bulgarian pepper red and yellow 1 each
Lemon
Mint
Butter 75 g
Dry white wine 100 ml
Salt, freshly ground pepper taste
Chili pepper (optional) 1 PC

Cooking method

  • Preparation:
  • 1. Rinse the salmon, dry it, season with salt, pepper and sprinkle with lemon juice.
  • 2. Cut the leek into thin rings.
  • 3. Cut the celery into thin slices.
  • 4. Disassemble the cauliflower and broccoli into small nomads.
  • 5. Cut the bell pepper into small pieces 1x1 (1x1.5).
  • 6. Grate the lemon zest.
  • 7. Turn on Shtebik Roasting mode for 10 minutes. Teflon bowl.
  • After the signal, put butter in the bowl, melt a little and add lemon zest and finely chopped pepper
  • chili, pour in the wine. Fry-evaporate for 2-3 minutes, stirring constantly and add the leeks, boil for another minutes
  • 4-5. Add celery, cabbage, bell pepper. Salt, pepper. We mix everything.
  • 8. We take parchment (I took baking paper in 2 layers), put half of the vegetables, put the fish on top, and on it
  • leftover vegetables. Put fresh mint leaves on top. We wrap everything tightly in parchment, for reliability
  • fasten with a stapler.
  • 9. Install a stainless steel bowl in Štebik, put our parchment roll into it. Fish mode 15 minutes.
  • Serge Markovich draws attention to the fact that you cannot replace parchment with foil or a baking bag. This is absolutely
  • different recipes and a completely different fish taste.
  • My impressions. The fish is amazing. Delicate, aromatic, with a very delicate piquant taste. Vegetables turned out
  • softish. I would consider them not as a side dish, but rather as a sauce. It is quite possible to supplement with boiled rice and it will be completely
  • full picture. But, again, it is difficult to tear yourself away from the fish, very tasty.
  • Try it. Cooking is easy and fun .... mmmm.
  • Bon Appetit!
  • Serzh Markovic recommends serving directly in parchment.

Helen, this is not a fish in parchment, this is a work of art. What a fine fellow! Thanks for the recipe
ElenkaM
Larochka! This is not me, this is Serge Markovich the wizard! I only repeat his recipes and adapt to Stebik!
Masinen

Girls, maybe I'll ask a stupid question, but answer all the same, that I can also shove a baking bag into a shtebik? What else can you put there? Folia aluminum?

Girls, maybe I'll ask a stupid question, but answer all the same, that I can also shove a baking bag into a shtebik? What else can you put there? Folia aluminum? Damn, I just watched that I needed a Teflon bowl, but I don’t have it and I don’t know where and what to smoke !!! : girl_cray: l
Antonovka
RinaPetit,
So, if I understood correctly, then only vegetables are fried in Teflon, and the bag itself is put in a stainless steel. But girls in stainless steel somehow fry - I can't
Chamomile
RinaPetitI don't know about Shteba, but I bake meat in foil in my pressure cooker. Wrap it tightly in foil, put some water on the bottom and bake it under pressure. I used to bake like that in the oven. But from a pressure cooker, the meat is softer and more juicy.

Chamomile1, Antonovka, thank you. I'm a beginner and just learning the technique. Stewing and all kinds of vegetables are important to me
Pavlena
ElenkaM, thanks for the recipe! I cooked it several times already - very tasty!
