Ingredients

Squid 5 pieces.
Carrot 4 things.
Bulb onions 2 pcs.
Champignon 8 pcs.
Salt pepper taste
Dill, parsley
Mayonnaise 2 tbsp. l.
Vegetable oil for frying

Cooking method

  • This delicious salad appeared in our house by accident ...
  • My husband's favorite dish was stuffed squid. For the holidays, I always tried to cook this, which has become a specialty, snack. Once we invited guests, and my husband offered to treat them to squid.
  • I prepared the vegetables, fried them, started the squid. And here I was in for a deep disappointment: the squids were not whole, but damaged! Not suitable for stuffing. It was necessary to come up with something urgently! I decided to cook those that are, mix everything and serve as a salad.
  • It turned out so delicious that they ate everything without a trace! And for several years now, I have not stuffed squid, but I just cook this salad.

  • 1. Wash carrots, peel, grate on a coarse grater.

  • 2. Peel the onion, cut into quarters.

  • 3. Cut the peeled champignons into slices.

  • 4. Sequentially fry onions, carrots and mushrooms in a little oil.
  • 5. Squid right in the sink, well pour hot water from the tap, remove the peeling skin, a thin film, remove the transparent chord. Cut lengthwise and peel off entrails.

  • Dip in boiling water, cook for 2 minutes (on a timer), put in a colander and rinse with cold water.
  • Cut into strips.

  • 6. Mix vegetables, mushrooms and squid in a bowl while still warm.

  • Allow to cool.
  • 7. Season with salt, pepper, add chopped herbs, mayonnaise (optional).
  • 8. Put in a salad bowl, garnish with herbs.

  • Be sure to let it brew in the refrigerator for at least 1 hour.

Note

Of course, the ratio of components can be changed to suit your preferences.
On fast days, I don't put in mayonnaise (enough vegetable oil from frying). I don't always use mushrooms either.
But in the recipe I give the most optimal, in my opinion, option.

1. We really have the same grains. I love this Moulinex very much and often use it in cooking.
Take a disc for this salad with large holes. (I use it for almost all salads and winter preparations.) Don't worry, frying will soften the carrots.
2. I have frozen squids too! Without defrosting, send them under hot water, peel (see item 4) and cook for 1.5-2 minutes (press with a spoon so that they do not float).
3. I don't always use mushrooms for this salad. It will still be delicious.

I really hope that this salad will not disappoint you either. I have repeatedly tested it on my guests, and their tastes are very different. They ate quickly and with pleasure.

Perhaps you have a more modern model. My grater is already 17 years old. And there are only 3 attachments in the kit. Then, probably, it is better to take a small attachment or steam a large carrot until soft under a lid.

Since there was a lot of cooking, I made overcooking from onions and carrots in a few days and froze them. 31 defrost overcooking, mushrooms and chopped squids and herbs. The salad is ready. Delicious and fast. I did it with ordinary mushrooms, I understood your advice, I might not like it, the salad was a little "slobbering", but it did not affect the taste at all.
