Ingredients

Salted herring 2 pcs.
Water 300 ml
Fresh ginger (rubbed) 1 tbsp. l.
Cinnamon (stick) 2 cm
Carnation 7-8 pcs
White peppercorns 1/2 tsp
Bay leaf 1 PC.
Sugar 4 tbsp. l.
Salt 1 tbsp. l.
Wine vinegar (red) 1 tbsp. l.
Ordinary vinegar 6% 1 tbsp. l.

Cooking method

  • I really love herring in wine sauce. But since I have not bought canned food for a long time, I also make such a herring myself.
  • We clean the already salted herring. We have excellent recipes for herring salting on the forum. We wash our herring under a tap with hot water, the skin is very easily removed and the bones are separated from the meat. We take out the bones, blot with a paper towel and set in thin slices.
  • Cooking the marinade. Pour water into a saucepan, put salt, sugar and spices. Cinnamon would be good to heat, but not ground into dust. Grind half of the pepper and cloves also lightly. Cook for about 15 minutes, cool a little and add vinegar. All.
  • Herring in wine sauce
  • We spread a layer of herring in a container, pour a little vegetable oil and gently fill it with still hot marinade. Then another layer until it ends.

  • After it has cooled, put it in the refrigerator overnight. In the morning you can already eat.
  • The most important thing is that the taste of "Herring in wine sauce" to which we are accustomed is achieved precisely due to the large amount of sugar and a set of spices. Vinegar does not play the main role here. It just gives its unique flavor and color.
  • Do not add onions to the marinade!

Yesterday I made such a herring - it really turns out almost like ready-made canned! The only thing is that next time I will fill it with not hot, but warm marinade, otherwise all the files fell apart into 2 parts - the dorsal and the rib, turned out to be many small pieces, it will do for the house, but you will not put the guests on the table.
But overall - very good!
