Ingredients

For fermentation:
Wheat groats 40 g
Corn grits 40 g
Hercules flakes, no boiling required 40 g
7 cereal flakes
(oats, wheat, barley, buckwheat, rye, millet, rice),
not requiring cooking
40 g
Yoghurt, homemade
(aged)
250 ml
Serum, purchased, aged 150 ml
Dough:
Wheat flour 400 g
+ 45 g
Liquid honey 23 g
Coarse salt 11 g
Sunflower oil 30 g
Yeast Saf-instant 7 g

Cooking method

  • I mixed the ingredients for fermentation, left for 9 hours. True, there was no fermentation, although Admin writes what should have been.
  • Bread maker Panasonic SD-ZB2502, program 01, size L, crust - medium.

Inspired by Admin recipes, she made 10-Grain Yeast Bread (so named). I added everything that was.

The bread is fluffy, soft. A bit sour for my taste. And I would add more sweets. And apparently before lifting, you can correct the shape. I will try further. Every day, studying the posts of luminaries, I realized that the most important thing is to feel the consistency of the dough.
I would be very grateful if experts would correct me. Corn grits in the crumb are visible, but the taste is not felt as grains. Next time I'll try to pre-brew it. I read about it when I put the dough.
