These 2 hours are temperature equalization. It’s probably warm in your kitchen, here it’s 2 hours and it’s just standing there, otherwise the dough will ferment in this mode for a long time. I have at 20-22 degrees. standing lasts 1 hour. It depends on the room temperature. Now the house has become warmer, 25 degrees. and in the French mode, my dough changes. I still bake this recipe on the main program. In general, there is equalization time in almost all modes (well, except for dumplings and pizza). So it's okay. It should be so. If the yeast starts working earlier, the dough may stand.

Lelikovna, if the yeast is dry, then under flour. If the start is delayed, then also under flour. If the yeast is pressed and the program will be without delaying the start, then you can immediately put everything into water. The salt is even right to dissolve. According to the recipe, sugar is not added to French bread, but if you personally decide to add sugar, then also in water. When the salt and sugar dissolve before the start of the kneading, it is even good - the bucket will scratch less.

P.S. This is the order of bookmarks in HP Panasonic. If you have a different brand of HP, then adhere to the usual bookmarking rules - water down, flour on top, yeast on flour.

The main thing with a long wait is to separate the water and instant yeast.

This tab is valid for any mode, if provided by your stove. I also always put salt and sugar in the liquid right away, only in different corners of the bucket, and dry yeast for flour. The modes differ not in the way they bookmark, but in the duration of kneading, proofing and baking. Proofing and baking are longer in French than in Basic
