Ingredients

wheat flour 950g
gluten free 50g
eggs 8-9pcs.

Cooking method

  • All ingredients (oil, water, yeast, eggs) should be cold, about 5 ° C. Since the dough is kneaded for a long time and at a slow speed, until the oil is completely absorbed.
  • All ingredients, except oil, are kneaded for 3 minutes at 1 speed. Then another 7 at 2 speeds, until the dough is smooth

  • Then leave at room temperature for 1 hour. Within an hour, after 30 minutes, the dough * stretch-fold * once. Then, in a closed container, transfer to the refrigerator for 12 hours. After 2-3 hours, crush the dough.
  • After 12 hours, put the dough on the table, divide into pieces, about 60g each. Roll up into balls.
