Cooking method

  • OPTION # 1
  • Mix two types of flour, sift.
  • Add sugar, pieces of chilled butter to the flour mixture and chop into fine crumbs with a knife. Add the egg and quickly knead the dough.
  • If you, like in my village, do not sell almond flour, we do this: Dip the almonds in boiling water and let it boil for 2-3 minutes, discard on a sieve, rinse with cold water and peel. Pat dry on a paper towel.
  • Pour nuts and granulated sugar into the blender bowl, grind into small crumbs ("pulse" mode).
  • Add wheat flour, chunks of chilled butter and chop into small crumbs (a blender with a "knives" attachment easily coped with this). Add the egg and quickly knead the dough.
  • If desired, you can add various flavors to the dough: a couple of drops of vanilla or almond essence, rum.
  • Wrap the dough in plastic wrap and refrigerate for one hour.
  • Cover the baking sheet with baking paper.
  • Pinch off pieces the size of a small walnut from the dough, roll them into sausages 1.5 cm thick and 4-5 cm long. Give them the shape of a crescent, slightly pressing in the center.
  • Bake in an oven preheated to 180C (convection 160C) degrees for 13-15 minutes until pale golden brown.
  • Remove even hot cookies from the baking sheet and sprinkle with powdered sugar and vanilla.
  • Store in a tin or glass container.

  • Place almonds (do not peel), powdered sugar and vanilla sugar in a blender or food processor. Grind into small crumbs ("pulse" mode).
  • Add sifted flour, softened butter and knead the dough.
  • Wrap in plastic wrap and refrigerate for an hour and a half.
  • Pinch off pieces the size of a small walnut from the dough, roll them into sausages 1.5 cm thick and 4-5 cm long. Shape them into a crescent. Place on a baking sheet lined with baking paper.
  • Bake in an oven preheated to 175-180C (convection 155-160C) degrees for about 20 minutes until pale golden brown.
  • Roll even hot biscuits in a mixture of sugar and vanilla sugar. It seemed to me that hot cookies are very fragile, so I just sprinkled the cookies with sugar mixture, right on the baking sheet, and let them cool completely.

Mix flour with starch and a pinch of salt, sift directly into the bowl of the food processor. Add chunks of cold butter and chop into crumbs.

Add yolks and quickly knead the dough. Wrap in plastic and refrigerate for an hour.

Divide the dough into small pieces (the size of a walnut), roll into balls. Roll each ball into a short, thick sausage, tapering slightly towards the edges, and bend it in a crescent shape. Place on a baking sheet lined with baking paper.

Bake for 15 minutes (I got 18) at a temperature of 180C (convection 160C) degrees.

Sprinkle the finished hot cookies directly on the baking sheet with powdered sugar and vanilla.

The cookies are very fragile! Therefore, we leave it on a baking sheet until it cools completely and only after that we carefully transfer it to a tin box.
