Chocolate tart with caramel and walnuts

Ingredients

Dough:
Wheat flour 160 g
Powdered sugar 60 g
Cocoa 30 g
Egg 1 PC
Butter 100 g
A pinch of salt
A layer of caramel with nuts:
Nut 300 g
Sugar 180 g
Butter 50 g
Cream 36% 45 ml
Honey 1 tbsp. the spoon
Water 50 ml
Ganache (chocolate sauce):
Cream 36% 3/4 cup
Chocolate 170 g

Cooking method

  • Knead the dough, I did it with a blender, wrap it in plastic wrap and chill in the refrigerator for 30 minutes.

  • Take it out of the refrigerator, roll it out, put it in a mold, previously greased with butter. Align and beat with a fork.

  • Put a sheet of baking paper on the dough, sprinkle beans, peas or rice on the paper (this will prevent the dough from rising) and bake at 190 ° for 15 minutes. Then remove the paper and bake for another 15 - 20 minutes.

  • Fry the nuts in a dry frying pan or in the oven, remove the peel.
  • Put sugar, honey and water in a saucepan, bring to a boil, stirring occasionally, to dissolve sugar and honey. Simmer over low heat (170 °) for about 15 minutes. The color of the caramel should be amber-gold.

  • Stir until dissolved. Put on fire and simmer over low heat for 1 minute.

  • Put this mass on our chocolate, cooled dough and refrigerate.
  • Cooking ganache. Heat the cream well, put the broken chocolate in it. Let stand for a while so that the chocolate melts. Stir well to form a smooth, shiny sauce (ganache). Pour the ganache over the chilled caramel mass and refrigerate to solidify.
