Ingredients

butter 75 g
Brown sugar 125 g
eggs 2 pcs
dates 230 g
orange juice (freshly squeezed) 150 ml
light honey (liquid) 2 tbsp
maple syrup (or light molasses) and 2 tbsp
baking powder 1 tsp
soda 0.5 h l
flour 175 g

Cooking method

  • 1. Remove seeds from dates, cut into small pieces, pour over orange juice and let it brew for about an hour.
  • 2. Beat the softened butter with sugar until fluffy. Then, while stopping beating, add eggs one at a time (they should be at room temperature). Add honey and maple syrup to the resulting mass and add flour mixed with baking powder in several steps.
  • 3. Purée the swollen dates with the juice using an immersion blender, add soda, mix and add to the dough.
  • 4. Switch on the Baking program, time 75 minutes. Cool the finished pudding on a wire rack and sprinkle with icing sugar. Or serve with caramel sauce. To do this, melt 50 g of butter in a saucepan, add 100 g of sugar and 3 tablespoons of molasses and cook over low heat for 5-7 minutes. Add hot cream, heat everything together for a couple of minutes and remove from heat.

Note

It turns out a tender, slightly moist, very aromatic cake. The recipe is taken from the "SAVEURS" magazine, in which the cake is not sprinkled with powdered sugar, but is poured over with caramel sauce. It’s too sweet for my family, so I served the sauce separately (you can also use a purchased caramel topping). The recipe suggests soaking dates in boiled water. I used orange juice, and in my opinion, I was right.
