Fish in a rice ring with mint sauce

Ingredients

rice 600 g
fish fillet (I have cod) 400 g
tomato 300 g
bulb onions 1/2 head
garlic 1 clove
dill 4 twigs
vegetable broth or water 1 l
saffron and / or turmeric by a pinch
Bay leaf 1 PC
pepper, salt
butter and olive oil for frying
For the sauce:
dried or fresh mint handful
lemon 1/2 pc
sour cream 3 tbsp. l. (I have milk) 200 ml
wheat flour 1-2 tbsp. l.

Cooking method

  • In search of an extraordinary serving of ordinary dishes, I came across this option for a fish casserole. Immediately sharing with you.
  • I used 70% of the listed ingredients and a 23 cm ring.
  • Finely chop the onion and fry it in olive oil in a heat-resistant dish.
  • Add rice to it and heat it slightly. Next, pour in the broth mixed with saffron and / or turmeric. Add bay leaf, close the lid and put in the oven, heated to 200 * for 15 minutes.
  • I did it in a frying pan. Fish in a rice ring with mint sauce
  • Heat the fish fillet, cut into small pieces, in a pan in a mixture of oils with the addition of chopped garlic.
  • Cut the tomatoes into small pieces and fry in olive oil, add fish to them, salt, pepper and remove from heat.
  • Grease the ring shape with butter and spread 3/4 of the rice. We crush the rice to the sides and bottom and put the fish filling in the center. Cover with the remaining rice and flatten.

  • We bake for 20 minutes in an oven preheated to 170 *.
  • During this time, prepare the sauce. Mix flour with sour cream or milk. Add lemon juice and finely chopped mint to the mixture and bring to a boil, stirring constantly.
  • Serve by gently turning the rice ring onto a platter and pour over the mint sauce.

I make rice from Krasnodar round. You can take the basmati, but in the first, the rice seems to stick together ... For safety reasons, you can drive an egg into the rice.

And dry mint must first be softened (you can in lemon juice), then done in sour cream or milk. My garden mint is very different from the store mint - more aromatic and tastier. Of course, fresh is always tastier ..
