Ingredients

Chick 1 carcass
Milk 6% fat or cream 10% or sour cream + water 500-700 ml
Garlic 1-2 heads (not cloves!)
Salt taste
Ground black pepper taste
Ground red pepper taste
Ghee or vegetable butter for frying

Cooking method

  • Cut the chicken carcass along the spine, spread it as flat as possible, dry it with paper towels (so that the skin does not stick tightly to the pan, and does not splatter in all directions), salt and pepper with black pepper.
  • Preheat the pan well. Fry the chicken in oil on both sides under a press until golden brown (almost done). I, as a press, used a flat dish with a deep bowl of water installed on it. Sometimes I put a 2-liter jar on the dish with some kind of seaming. Lucky owners of heavy boulders can use them.

  • After frying the chicken, remove to a platter or cutting board.
  • Drain the fat from the pan, leaving the sticks - they will give a rich taste to the sauce.

  • Pour milk, or cream, or water into a frying pan if the sour cream with water option is used. Scrape thoroughly with a spatula over the pan, peeling off and dissolving all the sticks. Add finely chopped or just crushed with a knife (hammer) garlic - I do it differently. The large chunks of crushed garlic can be easily removed from the sauce after cooking. This is true for those who do not like garlic on their teeth. If I chop the garlic finely, I take 1 head, if it is coarse, then 2. This time I made a sauce with sour cream, so after dissolving the burns I added it and garlic to the water, stirred it well.
  • Salt the sauce to taste, pepper with red pepper so that you feel the pungency.

  • Cut the chicken into small pieces and return to the pan to the sauce. If a little juice flows out of the chicken during cutting, add it to the pan as well.

  • Then there are 2 options to bring to readiness - cook until cooked on the stove or bake in the oven at 180 ° C. In both cases, it will take 10-15 minutes, no more, otherwise the sauce (especially the sour cream version) may stratify, which, however, is not so critical.

  • You can serve it with potatoes or wheat bread, thick pita bread works well, and - dunk-dunk-dunk! And of course, lick your fingers!

When I began to cut it into pieces, it was completely damp in thick places. It's good that then she brought it to mind in the oven in sauce. It took more than 15 minutes. The sauce was stratified, but it was still insanely delicious. All the pieces did not fit in the frying pan, I had to transfer them to the baking sheet. When frying, I used an old Soviet enameled colander bowl as a press, and a pan of water worked as a load.
I really liked the recipe. I will still do this, only I will take a chick no more than 1.5 kg.

If the chicken is a horse, then you can remove the breast bones and spine, so it will fry faster. Or simply fry for longer on a lower heat.
