Ingredients

Trout fillet 1 kg
Curd 9% 200 g
chopped greens (dill and parsley, green onions) 50 g
Spices (Provencal herbs) 1 1/2 tsp
Salt taste
Soy sauce 2 tbsp
Finely grated hard cheese 50 g
Garlic 2 cloves
Olive oil

Cooking method

  • 1. Fish was bought 2,300, Scales clean off. First remove the skin on one side. Separate the fillets, it turns out about 1 kg.

  • 3. Make a gas station. Mash the curd thoroughly with a fork. Add finely chopped herbs and cheese + 1 tbsp of olive oil + garlic (grate on a fine grater) + salt to taste. The resulting mass can be kneaded by hand.
  • 4. Remove the fillets from the bowl. Put the curd mass on it, wrap the roll. (that is, neatly fold the two halves)
  • 5. From the side where you can see the filling near the roll, wrap it with fish skin.
  • 6. Slightly pull the roll (not much needed) with twine in several places, so as not to break up during the frying process. Brush with olive oil.
  • 7. Preheat the grill to 250 g. Set the top plate to the maximum height (turn the levers) so that the roll is not pressed down too much. Put the roll neatly on the grill - close. Cook at 250 g - 5 minutes, change to 200 g - 10 minutes, then to 150 g - 10. Then turn it off. During cooking at 250 and 200, it is advisable not to open it, as the skin may stick and not have time to move away from the plates. I stood for another 25 minutes after cooking under the grill - waiting for rice.
  • 8. Put the finished roll gently on a cutting board (dish) and cut into portions.
