Cooking method

  • Leaven:
  • water 1.5 m / st.
  • rye flour 2 and 1/4 m / st
  • sugar 1.5 tsp
  • dry yeast 0.5 tsp
  • The sourdough should be prepared in a non-metallic, wide bowl, mixing all the ingredients and placing in a warm place for aging for 18 hours. Stir the starter every 3 hours.
  • I made the sourdough in MV on the "yogurt" mode (periodically restarting this mode after turning it off). At night, when it fell for fermentation, I did not stir it. And one more thing: open the valve for the entire time of preparation of the leaven so that the vapors escape.
