Cooking method

  • The dough is prepared in a safe way. Knead all ingredients except seeds at 1 speed for 5 minutes. Then add seeds and knead until smooth and firm. Proofing at room temperature for 1 hour with two strokes. Since the dough is prepared in a safe method, I made some minor changes. Namely, the yeast was reduced to 10 g (the author had 15 g) and, after room fermentation, was put into the refrigerator overnight. In the morning I warmed the dough, divided it into 10 pieces, formed long buns and soaked in the oven with steam until it doubled. Before baking, I made cuts, sprinkled with water and baked in a preheated oven with steam at 230 degrees for 10 minutes and without steam at 200 degrees. until ready.
