Ingredients

Warm water 100 g
Dry yeast 1/8 tsp (1-2g fresh)

Dry yeast 1/4 tsp
Salt 1 tsp
Sugar 1 tbsp. l.

Cooking method

  • Cooking dough:
  • Dissolve yeast in warm water, sift flour and stir thoroughly
  • Cover the dishes with dough with foil and put in a warm place for 10-12 hours
  • Final batch:
  • Dissolve yeast in water, add dough and stir thoroughly
  • Sifting flour in parts, knead the dough, add salt at the end, knead for 8 minutes (I knead either in the combine. Or in the HP)
  • Place the dough in a greased dish, cover and let rise in a warm place for 60 minutes.
  • I baked in Brandik on Manual mode. by programming it in two stages: proofing and baking.
  • Proofing at 25 degrees for 1 hour and baking at 115 degrees for 50 minutes. Then turn over and bake for another 25 minutes.

Time for preparing:

60min + 50min + 25min = 2h15min.

I took bread according to the recipe Bread of the Province of Como, only changed the proportions of liquid / flour. I really like this bread in AG, in the oven, and this is not the first time I have baked it in MV, it turns out delicious.
