Eggplant in mint-pomegranate sauce

Ingredients

eggplant 2 pcs
mint bunch
Garnet 1/2 part
lemon 1/2 part
olive oil 2-3 st. l.
pomegranate sauce (not used)
salt pepper taste

Cooking method

  • I offer you a bright, not only in appearance, but also in taste, warm salad from Julia Vysotskaya.
  • 1. Cut the eggplants into 0.5 cm thick plates. You don't have to remove the bitterness, but I didn't risk it and dipped them in slightly salted water for 15 minutes.
  • 2. Sprinkle the plates with olive oil and grill in a pan (I used a regular pan) on both sides. Salt and pepper the ready-made eggplants.
  • 3. Prepare the sauce: grind the mint, add lemon juice, olive oil, Narsharab pomegranate sauce, salt and pepper. (Instead of pomegranate sauce, I used red currant jelly - 1 tsp.)
  • 4. We disassemble the pomegranate into grains.
  • 5. Now put the eggplants on the dish, sprinkle with pomegranate seeds and pour over the sauce. The following plates can be placed on top - they will soak even better with the sauce.
  • Serve the salad warm.
