Apple-honey bread with whole grain wheat flour

Ingredients

For dough:
whole wheat flour 150 g
water (33C) 150 ml
fresh yeast 1 g
For the test:
all dough
wheat flour 350 g
water 150 ml
fresh apple (peeled, grated) 120 g
light honey 1 tbsp
salt 1.5 h
olive oil 1 tbsp
fresh yeast 5 g

Cooking method

  • 1. For dough, dilute the yeast in water, combine with flour, mix until smooth and leave at room temperature for 2-2.5 hours to rise (during this time, the dough slightly increases in volume).
  • 2. For the test, grind the remaining yeast with honey and combine with water. Add to the dough and beat together until smooth. Mix flour with salt, combine with dough and knead at medium speed for 6-7 minutes. Then add the grated apple and olive oil and knead for another 6-7 minutes. Put the finished dough (it turns out sticky, watery) in the refrigerator for 12-14 hours.
  • 3. Remove the dough from the refrigerator and place on a well-floured cutting mat. Fold in an envelope twice and let the dough rest for ten minutes. Then form the dough into a ball and let it stand for 60-90 minutes.
  • 4. Bake in an oven preheated to 220C with steam for the first 5-7 minutes, then lower the temperature to 180C and bring the bread to readiness. Before baking, brush the bread with milk or water and make cuts.

Note

It turns out soft, solid bread with a thin, crispy crust.

I think, when kneading in HP, it is more convenient to mix apples with dough, and then combine everything together and turn on the kneading. Then such problems should not arise.
