Briam (Greek stew)

Ingredients

eggplant 3-4
potatoes 3-4
zucchini 3-4
bulbs 2
green pepper 1
tomato 2-3
pummaro 1/2 pack
parsley 1 bundle
salt
pepper
olive oil 1 cup

Cooking method

  • Wash, peel the courgettes, cut into medium slices
  • Briam (Greek stew)
  • Wash the eggplants and also cut into slices. I also peeled the eggplants from the skin (in the original recipe, the eggplant skin was not removed)
  • Briam (Greek stew)
  • Chop onion, pepper (after removing seeds and veins), parsley, tomatoes and potatoes.

  • Put everything in a briam dish, add oil and mix everything well.

  • The original recipe uses pummaro - finely chopped tomato in its own juice. We can't buy pummaro anywhere, I took a few tomatoes instead of it and rubbed it on a grater, and seasoned with chopped basil (fresh)
  • Briam (Greek stew)
  • Pour the sauce into a dish, add 2 more glasses of water, salt and pepper.
  • Bake in the oven at about 180 degrees for 1-1.5 hours or more. Stir occasionally and add water if necessary.

Wonderful recipe, dietary Question - where is the oil indicated in the ingredients used?
Alim
It turns out that everyone around me and I cooked Briam * JOKINGLY * all our lives and thought it was just a vegetable stew. Convenient dish, can be eaten hot and cold, take anywhere with you

Victoria, thank you. I corrected the recipe, I really missed about the oil. The oil is added when all the vegetables are placed in the baking dish. I just poured the dish over them.

Marina, probably, vegetables cooked in this way are tastier? Braised and baked?

Irina, I liked it, they differ from simply stewed ones, with a sour sauce. And it's more useful this way
Merri
Yes, I will like it too, perhaps! Thanks for the useful information!

Marina, thanks for the recipe! I made it today, delicious. Indeed, on the stove you seem to be doing the same, but the taste is different. Thank you!

Vika, and thank you I am glad you liked this stew too

and not much water? Does it all evaporate afterwards?
misterious
legend, during this time, almost all of it has evaporated, the dish costs 1-1.5 hours in the oven. If there is not enough liquid, all vegetables will simply dry out.
legend
thanks, I will definitely try.
