Berliners with chocolate (in the oven)

Ingredients

wheat flour 250g
warm milk 70g
fresh yeast 15g
butter, soft 30g
vanilla sugar 30g
salt 3d
egg 1 PC.
For filling
butter 20g
melted chocolate

Cooking method

Dissolve yeast in milk. Mix in flour, then with the rest of the ingredients. Knead at low speed for 4 minutes. Then increase the speed and knead for another 6 minutes, until a uniform, elastic bun is formed.
Transfer the dough to a container and leave at room temperature for 2 hours. During this time, the dough "stretch-fold" 1 time. (Or make a wrinkle)
At the end of the time, transfer the dough to the refrigerator for 12 hours (overnight)
Allow the test to acclimatize for 30 minutes at room temperature before use. Then divide into 8 parts, and roll each part into a ball. Cover with foil and let the dough rise for 1 hour (until doubled).
Brush with melted butter before baking.
Bake in an oven preheated to 210C for 12 minutes.

After the oven, grease again with ghee and sprinkle with powdered sugar.
Into still warm Berliners add chocolate melted with butter using a pastry bag with a fine nozzle.
