Bay leaf 2 pcs.
Black peppercorns 6-8 pcs.
To fill:
Water 250 ml
Tomato paste 3 tbsp. l.
Fine salt 1 tsp
Apple cider vinegar 1 tbsp. l.
Sugar optional

Cooking method

  • I offer you several options for cooking marinated fish according to the same recipe. Everyone can choose the option that they like. For this dish, I take the simplest fish, with white meat: pollock, hake, navaga.
  • Cooking.
  • Method 1 (Simplest).
  • 1. Cut the fish into round slices 2-2.5 cm thick. Sprinkle with salt (1 tsp) and seasoning.

  • 3. Cut the onion into quarters.
  • 4. Pour oil into a saucepan of a pressure cooker, lay carrots, onions and fish in layers. The last layer is carrots with onions.
  • 5. Prepare the filling: mix water, tomato paste, vinegar, salt (1 tsp), sugar (optional).
  • 6. Pour fish and vegetables. Add bay leaves and peppercorns
  • 7. Manual mode, time 12 minutes, pressure - 1.

  • P.S. This is the easiest way to marinate fish. It's not bad if it doesn't bother you to eat fish, taking out the bones right at the table. For guests and small children, I would not recommend this option.
  • Method 2 (Almost canned food).
  • 1. Cut the fish into round slices 2-2.5 cm thick. Sprinkle with seasoning and salt (1 tsp). Can be rolled in flour.
  • 2. Wash carrots, peel, grate on a coarse grater.
  • 3. Peel the onion, cut into quarters.
  • 4. In a pressure cooker on the "Fry" mode (pressure - 3, time 20 minutes), sequentially fry the carrots and onions. Take out, mix.
  • 5. Fry the fish. (To speed up the process, all frying can be done in a pan.)
  • 6. Prepare the filling: mix in one bowl water, tomato paste, vinegar and salt (1 tsp).
  • 7. Place the fish in a saucepan of the pressure cooker and put vegetables on top. Drizzle with fill. Arrange bay leaves and peppercorns.
  • 8. Cook on slow cooker program, time 70 minutes, pressure - 1.
  • 9. After the signal, turn off the "Heating", release the pressure, open the cover. Let cool in a saucepan or transfer to another container.
  • 10. Serve cold.

  • P.S. This is the longest cooking method. It is interesting because fish can be eaten with bones. But, in my opinion, it tastes slightly boiled, the vegetables are too soft. A bit like canned food in tomato sauce (and, alas, I don't like them).
  • The husband, on the contrary, liked this option very much. He asked for a long time to cook fish "with soft bones."
  • This means that this method has a right to exist.
  • Method 3 (Favorite).
  • 1. Cut the fish into fillets with skin (use bones and heads for soup).
  • 2. Mix flour with salt (1 tsp) and seasoning for fish. Dip the fish in this breading and set aside.
  • 3. Grate the peeled carrots on a coarse grater.
  • 4. Cut the onion into quarters.
  • 5. Enable "Fry" program, pressure - 3, time - 20 minutes.
  • 6. First fry the carrots and onions in oil. Take out.
  • 7. Then fry the fish fillets on both sides (only until lightly grabbing the breading).
  • 8. In a saucepan, lay the fried foods in layers: vegetables - fish - vegetables.
  • 9. Prepare the filling: mix water, tomato paste, vinegar, salt (1 tsp).

  • 12. After the readiness signal turn off the "Heating". Let the dish brew for 10-15 minutes. Then transfer to another dish. Cool down. Serve cold.

  • P.S. In the name of this method, I expressed my attitude to this option. For so long I have been cooking marinated fish in a slow cooker (only I increase the time), so I prefer to do this now in a pressure cooker.
  • Conveniently, there are no bones. You can immediately eat both fish and vegetables without fear of swallowing the bone. Neither vegetables nor fish are overexposed. Their taste is bright, rich. I highly recommend this particular option for preparing fish under the marinade.

I did it according to the first recipe, but instead of vinegar I added lemon juice and replaced the tomato paste with sauce, increasing the amount of sauce twice. Yesterday I also tried the second option for cooking fish. But after my relatives were fucking about the bones, I ground the fish together with the bones (I can't make fillets yet), added an egg, onion and carrots to the minced meat. blinded cutlets. Top vegetables and then follow the recipe.
