Raisin Nuts Cupcake (Lean)

Ingredients

Wheat flour 4 tbsp.
Salt pinch
Sugar
(I give 1.5 tbsp.,
it's too sweet for me)
2 tbsp.
Vegetable oil 1 tbsp.
Raisins 1 tbsp.
Walnuts (sliced) 1 tbsp.
Apple broth
(I always make on compote
from dried apples / pears without sugar)
2 tbsp.
Soda 1 tsp
Ground cinnamon 1 tsp
Vinegar 3% 1 tbsp. l.

Cooking method

  • Mash sugar and butter, add salt, raisins, finely chopped nuts, dilute with a decoction of dried apples, add soda.
  • Add flour, cinnamon little by little, pour in vinegar and stir. Put the dough in a greased mold, BUT if the mold is silicone, then you can not lubricate with anything.
  • According to the recommendations given to the recipe, the cake should be baked for 50-55 minutes in an oven preheated to 180 * C, BUT I bake for 1 hour, even 1 hour 10 minutes and then keep it for another 15 minutes on residual heat.
  • Add deliciously dried cherries or cranberries, it will turn out with sourness. In the photo I gave half of candied fruits with raisins, sugar is also less.

Note

I have been making this cupcake for several years now according to the following recipe.
The specified number of ingredients makes a large cake. For one or two people, you can take half of the food. I bake in a silicone mold with a hole. Sprinkle with icing sugar on top.
For guests - ideal.

SchuMakher, I personally have not tried with other compotes, but the older daughter-in-law did it on tea and not even hibiscus, it seems, if my memory serves me right. True, there were some inadequate color reactions with hibiscus, so I think it's not worth repeating with hibiscus.
I think you can try with currant compote, the main thing is to take into account the amount of sugar in the compote and reduce the sugar in the cake, because it comes out very sweet.

Maybe that's why it is necessary to bake it according to the recipe for 50-55 minutes, and not like me for more than an hour. I think it's because of the shape.

RybkA, brought huge gratitude for the recipe for a Very tasty cupcake! Pekla already twice, as a "compote" I used 3-4 cl. l. jam (strawberries and raspberries grated with sugar), diluted in the required amount of water - super tasty and aromatic. Added raisins and dried cherries.
