Ingredients

Wheat flour 1 grade 400 g
Fresh pressed yeast 12 g
Salt 6 g
Water 140 g
Sugar 20 g
Margarine (I have lard) 14 g
Milk whey 120 g

Cooking method

  • Grind yeast with flour. Add all other ingredients. Knead 4 minutes at low speed, 14 minutes at high speed.
  • Dough at the end of kneading
  • Roll with whey according to GOST (accelerated method)
  • Fold the dough, place in a greased container, cover and leave for 30 minutes at a temperature of + 29º / 33ºС. Then knead, fold again. Return to container and leave for another 30 minutes. Then repeat the folding procedure. In this way. total fermentation time is 90 minutes.
  • After a lapse of time, knead the dough, form a ball. Place in a proofing basket with the seam facing up and leave for 40 minutes at a temperature of + 30 ° C.
  • Before baking, make 2 longitudinal cuts, sprinkle with water.
  • Bake in an oven preheated to 220C for about 45 minutes. The exact time depends on your oven.
  • I baked in a cast iron pan (3 liters and the top was sealed as always) for 20 minutes under the lid, 25 minutes without.

  • Gorgeous bread with a crispy crust and tender crumb in 3 hours, including pastries !!!
