Ingredients

For the salmon riyet:
fillet of salmon or other fish (I have cod) 300 g
cold smoked salmon 150 g
capers 1-2 tbsp. l
chives (I have a shallot) 1 bundle (1 piece)
olive oil 3 tbsp. l
butter 3 tbsp. l
salt pepper
For salmon and cheese filling
smoked salmon slices 200 g
curd or processed cheese 200 g
garlic 2-3 cloves
dill and parsley 2 tbsp. l
lime zest and juice 1 tbsp. l.
salt pepper

Cooking method

  • A suitable recipe for a festive table, and also when you need to dispose of some of the products.
  • Riyette is a French pate. It is not chopped in a blender, but cut into small pieces.
  • Let's first prepare the first version of the appetizer - rolls with a riet. You cook pancakes according to your favorite recipe.
  • Boil fresh fish and disassemble it into small pieces, chop finely smoked fish. Mix the butter with olive oil.
  • Chop the onion and capers and combine all the ingredients. Add salt and pepper. Riyette can and even should be prepared in advance, preferably 48 hours in advance and kept in the refrigerator.

  • Spread the filling on the pancake and wrap it up. Better if we put the wrapped roll in the refrigerator for 1-2 hours and then cut it.

  • This is smoked salmon with curd or processed cheese.
  • Mix cheese with chopped herbs, garlic, zest and lime juice. Add salt and pepper.

  • Spread cheese mass on cold pancakes, lay out trout slices, leaving one free edge with cheese. We twist the pancakes so that the free edge of the pancake tightly wraps around and glues the roll.

After seeing in a magazine how the author of the recipe spins a large square pancake, I decided to make the same ... in the oven on a baking sheet. And yet it turned out (for the second version of the filling)! Just a little airy. But how convenient it was to roll it up.

I myself wonder how such a thing got into my head ...
I just poured the dough onto a baking sheet that was hot in the oven, greased with oil and baked at 150 * C for about 10 minutes, first on the lower level, then on the upper (but these are the features of my oven).
During the baking process, the pancake swelled a little in several places, so I carefully punctured it.
It turned out to be rectangular - not square ... I made a reservation.
