Cinnamon Pull-Apart Bread

Ingredients

sugar 1/4 st
dry yeast 2 1/4 tsp
wheat flour 3.5 - 5 tbsp
butter 6 tbsp. l (60-70g)
milk 1/3 st
eggs 2 large
salt, vanilla extract taste
FILLING:
sugar 3/4 st
cinnamon 2 tsp
nutmeg 1/4 tsp
butter 2 tbsp. l (15-20g)

Cooking method

  • I found such a cheerful cinnamon bread and could not pass by.
  • It will soon be two years since I came to our site! And I am so glad that I can already bake this kind of bread. And in the beginning, there were so many questions and problems! But here I learned not to be afraid to take on the most daring recipes and get so much joy from it!
  • So I found the bread so joyfully playful.
  • First I translated the size of their "cup" into our "glass". I have a cup mark on my measuring cup, but the recipe needs grams. Since in different European countries it ranges from 200 to 250 g, I used our 250 ml glass.
  • 1. In a small bowl, mix 1/4 cup warm water, yeast and 1 tbsp. l. Sahara. Leave for 5 minutes, until the mixture is foamed and doubled.
  • 2. Melt the butter and milk by removing from the heat and adding the vanilla extract. Let us cool this mixture and then add eggs to it.
  • 3. In a large bowl, combine together 2 cups flour (I have 285 g), 1/4 cup sugar (65 g), salt, yeast mixture and egg.
  • Stir until smooth, gradually adding flour (I did this in a food processor for 3 minutes).
  • It should turn out to be a bun, but it should remain sticky. (The author does not indicate the exact amount of flour, since everyone achieves this state of a bun with a different amount of flour, according to its characteristics.)
  • I had to add another 1 3/4 cups of flour.
  • 4. We place our kolobok in a greased container, cover with foil and remove for 1 hour to double in volume.
  • You can put the dough in the refrigerator and use it in the morning of the next day.
  • 5. Mix sugar, cinnamon and nutmeg for the filling. Melt 2 tbsp. l butter.
  • 6. On a table sprinkled with flour, roll out the finished dough into a layer of 30x50 cm, 0.5-0.7 cm thick. Lubricate with butter, pour in the filling and press lightly with a rolling pin.
  • 7. Cut the vertical strips. They will turn out to be 6-7 pieces. We put the strips on top of each other and cut across. We'll get from 36 to 49 pieces.

  • 8. Place the squares in a greased baking dish. Fold the remaining pieces into a smaller shape.
  • Cover with a towel and leave in a warm place for another 35-45 minutes.
  • During this time, we will heat the oven to 190 * C.
  • 9. Bake for 30-35 minutes, until the top is browned. Make sure the middle is baked. because the syrup formed during baking will accumulate in the center.
  • 10. Allow the bread to cool for 20 minutes in the form and remove it on the wire rack.

  • The bread is broken off into slices. They come out as separate buns. Can be cut with a knife.
