Ingredients

Spinach 500 gr.
Cottage cheese 250 gr.
Eggs 2 pcs.
Parmesan cheese (grated) 2 tbsp. l.
Breadcrumbs 4 tbsp. l.
Wheat flour 2 - 3 tbsp. l.
Vegetable oil 2 - 3 tbsp. l.
Salt taste.
Pepper taste.
Nutmeg taste.
Sauce
Champignon mushrooms (I have honey mushrooms) 300 gr.
Cream 200 ml.
Vegetable oil 3 - 4 tbsp. l.
Salt taste.
Pepper taste.

Cooking method

  • Boil the spinach in boiling, salted water for 3-4 minutes. Drain, let cool, then squeeze and chop finely. If you take frozen spinach, then it must be thawed. Heat vegetable oil in a frying pan, add flour. Fry it until golden brown, add spinach and simmer for a few minutes until the liquid evaporates.

  • Put crackers, eggs, cottage cheese in a bowl, 2 tbsp. l. grated cheese, salt, pepper and nutmeg. Add spinach, stir.

  • Form the dumplings into a pie or ball and dip them in salted boiling water. Do not cook much in a small saucepan at a time. Better in two steps or immediately take a large saucepan. When they come up, immediately take out with a slotted spoon. Do not overcook, otherwise they will fall apart: the dumplings are very tender.

  • For the sauce: chop the mushrooms and fry in vegetable oil. Season with salt and pepper. Add water and simmer until tender, add cream at the end.
